SPONGE CAKE WITH STARCH
The sponge cake is a sweet, soft and spongy paste, its recipe is the basis of the pastry. Thanks to the Eurovo Service pasteurized Whole Egg the preparation will be fast and perfect.
ingredients
500 g Whole Eggs
350 g Caster sugar
50 g Potato starch
300 g Wheat flour 00 – W130-180
method
– Whisk the whole eggs with the sugar using a stand mixer with a whisk attachment (warm the mixture to 30°-40°C for hot process)
– In the meantime, sift the flour with the starch in a separate bowl to lighten them
– Sift the powders together manually to obtain a homogeneous mixture
– Put it into the molds
– Bake at 180°-190°C for 15-25’ depending on the size, keeping the valve always open
