FRENCH MERINGUE (COLD)
To prepare this meringue, whisk the Eurovo Service Egg White at medium speed. Fold in the caster sugar immediately and the superfine sugar at the end of the whipping, then add the lemon juice. Bake the meringues.

200 g Egg white
200 g Caster sugar
method
– Whisk the egg whites with 1/3 sugar using a stand mixer with a whisk attachment
– Slowly add 1/3 of the sugar during whipping
– Just before the whipping ends, add the last third of sugar not stopping the mixer
– Pipe the mixture onto parchment baking paper using a pastry bag
– Bake at 80°-130°C depending on the desired result, until it is completely dry
